Here is an example of a list of weekdays, which the host requires be entered as a single numeric digit--we are translating to day names to make selection easier for the user.
When entering, the Text will be displayed to the user, while the Value corresponds to the host value. Sometimes, it might be useful to include the existing code as the beginning of the text, to make usage easier for existing, trained users (accustomed to keying the code!).
